What to Put on Eggs: 12 Easy Toppings

Quick Meals ✦ Eggs
Eggs are the fastest meal there is, and the right topping turns them from a snack into something you look forward to. Here are twelve easy things to put on fried, scrambled and boiled eggs, from the store cupboard basics to a Burmese peanut and sesame topper.

Twelve egg toppings

  1. Chilli crisp or chilli oil. A spoonful over a fried egg is one of the best things you can eat for breakfast. Spoon some of the oil into the pan too.
  2. Thami Letto. Our Burmese rice and noodle topper of roasted peanuts, sesame and crispy onions. Spoon it over fried or scrambled eggs for crunch, savouriness and a gentle warmth. It is milder than chilli crisp.
  3. Soy sauce and spring onion. A few drops of soy and a pile of sliced spring onion, especially on a fried egg over rice.
  4. Crispy fried onions. Sweet, savoury crunch. A handful from a tub works fine.
  5. Fresh herbs. Chives, dill, parsley or coriander, chopped and scattered over at the end.
  6. Za'atar or dukkah. Herby, nutty spice blends that are made for eggs.
  7. Feta and black pepper. Crumbled over scrambled eggs, with a little olive oil.
  8. Yoghurt and chilli butter. Warm garlicky yoghurt topped with eggs and melted butter with chilli flakes, the way Turkish eggs are made.
  9. Kimchi. Chopped and stirred into scrambled eggs at the end, or piled next to a fried egg.
  10. Everything bagel seasoning. Sesame, poppy seeds, garlic, onion and salt. Very good on boiled eggs.
  11. Hot sauce. The classic for a reason.
  12. Green chilli, tomato and onion. Cooked into the eggs at the start, the way they are made in South Asian homes, with a pinch of turmeric and chilli powder.

An egg will take on almost any flavour you give it. That is why it is the best canvas in the kitchen.

Best toppings by type of egg

Fried eggs

Crispy-edged fried eggs suit bold toppings: chilli crisp, Thami Letto, soy sauce or hot sauce. Fry the egg in plenty of oil over a high heat and spoon the hot oil over the white so it sets while the yolk stays runny.

Scrambled eggs

Soft scrambled eggs suit fresh herbs, feta, kimchi and anything crunchy for contrast. Add toppings at the end, off the heat, so they keep their texture.

Boiled eggs

Halved boiled eggs suit seasoning blends, a pinch of flaky salt, or a spoonful of something punchy on each half. Seven minutes gives a jammy yolk; nine gives a firm one.

Three quick egg meals with Thami Letto

Fried egg on rice

Fry an egg until the edges are crisp. Put it on a bowl of warm rice, add a spoonful of Thami Letto and a few drops of soy sauce, then break the yolk and mix everything together. Finish with spring onion and lime. Five minutes from start to finish.

Thami Letto scrambled eggs on toast

Scramble two eggs softly in butter. Pile them on hot buttered toast and spoon Thami Letto over the top, with a few slices of avocado if you have one. The crunch of the peanuts against the soft eggs is the point.

Burmese style egg and noodles

Mix two spoonfuls of Thami Letto through warm noodles and top with a halved six-minute egg, coriander, raw onion and lime. See our guide to easy rice noodle recipes for more.
